The Japanese traditional dietary culture, namely Washoku, expresses an essential respect for nature and the cycles of the year. It make full use of natural and fresh ingredients, in order to bring out the original flavour of the food. The best example is sashimi. To bring out its inherent deliciousness, Sashimi is cut in different styles and thickness according to the species and the freshness of the fish. In Washoku, every dish keeps seasoning to a minimum to bring out the inherent flavour of the fresh seasonal ingredients. Dashi, a delicious fish stock is often used to carefully bring out the flavours of other ingredients. Therefore, Washoku is also known as ‘Cuisine of Subtraction’. Another characteristic of Washoku is the sense of beauty of nature and of the changing seasons expressed at the table. By using decorative dishes and other utensils that reflect the changing seasons, we hope you enjoy each season at meal times. Washoku is designated as an Intangible Cultural Heritage by UNESCO.
