Signature dishes include pan seared foie gras with Sicilian lemon jam, yuzu sorbet and pomegranate dressing; 43°C wild salmon, sea scallops, Castelluccio lentils and port wine reduction; homemade pappardelle, duck ragout, porcini and pecorino cheese; and charcoal grilled smoke spiced rubbed beef short ribs and chimichurri.
