銀座の老舗
Established in 1927 by Nobukatsu Shibuya (澁谷信勝), Ginza Bairin was the first Tonkatsu restaurant in Ginza. It has been offering truly authentic Tonkatsu and other signature dishes for three generations. It’s now one of the oldest Tonkatsu restaurants in Japan and is still going strong. Its trademark is ‘Chin Ton Shan’, Japanese for rare pig beauty (珍豚美人), showing the noble elegance of a pig playing a Shamisen (三味線), a three-stringed traditional Japanese musical instrument. Famous Japanese storyteller Teijo Ichiryusai (一龍斎貞丈) offered this nickname which was so popular that many people have mistaken it as the restaurant name.

The present restaurant director Masaya Shibuya (澁谷昌也) has given great emphasis to this first overseas expansion. He has sent the Executive Chef from Ginza's flagship store in Tokyo over to overlook train and supervise the Hong Kong kitchen team and to ensure the shop delivering delivers the same unique and mouthwatering Tonkatsu to Hong Kong dining patrons. Every day at Ginza Bairin we offer a selection of premium pork loin and tenderloin imported from Japan. We start with the pork loin and two kinds of pork tenderloin from Miyasaki and Kagoshima. The selections change on a regular basis to keep our diners astonished.
