Jules Brouard returned to Paris after the war to take up work in the abattoirs of Les Halles de Villette – Paris’ meat-market. Imagine a place barely changed since Zola epitomised the lives of its inhabitants in his novels; steaming half-carcasses, brutes of men in aprons, fogs of Gauloises, meat-hooks and knives, glinting in the sodium light, stripping flesh from bone, discarding fat & sinew, to bring Parisians – from Moulin Rouge dancers & rive gauche artists to Counts & Countesses – their saussicon, their fillet mignon, their boudin noir…this was the world the original Jules inhabited.
The sights, the smells, the stories came home with him day after day, stained into his aprons, crusting his overalls, carved into illicit joints of paper-wrapped meat to be shared with a baguette & jugs of wine. His impressionable grandson could not help but be fascinated, be drawn into this other world where he developed his love of the characters, of the food, of the honesty & authenticity of traditionally sourced and perfectly prepared ingredients that is French bistro cuisine.

Chef Patron Laurent & his partner in Jules, Patron Connaisseur Nick are two expatriates living in Hong Kong, drawn together through a common belief in sharing good times with family and friends with honest simple tasty food lovingly prepared.
