Kuriya Dining

Found only in the homes of the Japanese noble class, the Kuriya is where meals for important guests are prepared. Master Chef Tsuzuki’s unique and fusion creations can be seen in his clever use of various kinds of homemade sauces and Western inspired dishes created with seasonal ingredients from Japan. His cooking is essentially based on traditional Japanese cooking methods using dashi or stocks from bonito and kelp.
