The culinary style of Huai Yang is one of the prevailing pillars of China’s great four distinctive cuisines, with Yangzhou, located between Zhang Jiang and the Huai River, being a primary source of celebrated seafood recipes. Braising, simmering, coddling, and steaming require patience and delicate preparation. Huai Yang’s flavor carries a hint of sugary taste that enhances its color and aroma; the brighter and more colorful the dish, the stronger its flavor, and vice versa.
